This sparkling Riesling is from the single vineyard Römerstich, which boasts sandstone and clay slate soils. It undergoes gentle whole bunch pressing, followed by a long fermentation in used barrique casks and steel tanks, spending 6 months on full yeast. After a second fermentation, it matures in the bottle for 24 months, revealing fine notes of green apples and brioche with a mineral and salty finish.
