Pétillant Weiß 2019 Bio

Pétillant Weiß blends Sauvignon Blanc and Riesling from a terroir of limestone, flint, loess, and clay. The grapes were directly pressed after harvest, with the base wine fermentation occurring in 500 L oak casks for 12 months.
A unique feature of this wine is the second fermentation, which employs zero dosage and exclusively uses must from the following vintage. This means that the 2019 vintage starts its second fermentation with must from the 2020 vintage.
It results in a yeasty, bone-dry wine featuring spicy notes alongside hints of ripe pears and green apples.
