This Pet Nat (Pétillant Naturel) blends 60 % Pinot Noir with 40 % Zweigelt grapes, creating a distinctive character.
Grown in loess, clay, and sandy soils, the grapes undergo a special process. They are crushed after harvest and experience skin contact for several hours, followed by gentle pressing and fermentation in stainless steel tanks. The fermenting juice is then bottled with the precise amount of residual sugar for the final fermentation. Natural yeasts work their magic, transforming the sugar into alcohol and carbon dioxide. This Pet Nat undergoes a single disgorgement after completing its fermentation in the bottle.
The result is a juicy and fresh Pet Nat, highlighting delicate red berry notes and culminating in an elegant, mineral finish.
