Crafted from Riesling grapes grown on steep slopes and slate, the base wine for this Pet Nat ages for 2 years in a 60-year-old 1000 L Fuder cask. The fermenting juice is bottled with precise residual sugar in spring to accelerate the final fermentation at higher temperatures. Yeasts convert the residual sugar into alcohol and carbon dioxide, resulting in a fresh, delicate Pétillant Naturel with subtle notes of pears, apples, and a hint of lemon.
